Method

  1. 1

Knead a soft, elastic dough with flour, water and salt and divide it into pieces.

  2. 2

Roll out the meringue with a rolling pin into paper-thin, oval or round shapes.

  3. 3

Attach it to the hot tandoor wall with the help of a traditional tandoor pad (cook it at home on an upside-down cast iron sheet).

  4. 4

When it swells in seconds and slight brown stains appear, take it and keep it in a cloth to prevent it from drying out.
